Cool Blueberry Blissful Bites

With summer just around the corner, here is a tasty treat my kids LOVE! Not only are they delicious, but they are made with local honey and loads of nutrient dense ingredients to ignite you taste buds without the carbohydrate crash. ENJOY & let us know how it goes on the Facebook community page!

Ingredients: makes 12 mini cupcakes

Crust

2 cup walnuts

¼ cup honey

1 tablespoon coconut oil

Filling

1 tablespoon coconut oil

2 cups blueberries, frozen

½ cup walnuts

1 cup cashews

2 tablespoons coconut sugar

½ cup water

How to Prepare

Blend all the CRUST ingredients in a food processor until a batter is formed. Place the batter evenly into the mini cupcake tray so the edges reach the top of each piece. Place all the FILLING ingredients into the food processor and blend until well combined. Pour the ice cream evenly over top of each crusted mini cupcake. Garnish with a fresh blueberry and freeze for 1 hour before serving. Store any leftovers in an airtight glass container in the freezer and consume within 30 days.
