I love having fun in my kitchen. This was a different take on macaroons I came up with. They are delicious and look impressive if you have someone you want to share them with.
Ingredients: makes 12 squares
3 cups shredded coconut
¼ cup coconut oil, room temperature
1 mango, sliced thin
2 tablespoons maple syrup
1 teaspoon cinnamon
24 goji berries
12 pieces fresh mint
How to Prepare;
Using a vegetable peeler, remove and discard the skin from your mango. Using the same peeler, peel your mango until you have 12 similar sized thin slices. In a food processor, blend the shredded coconut, coconut oil, cinnamon, sea salt and maple syrup. Using your hands, pack down firmly 12 portions into squares. Cut 12 mango slices into similar rectangle shapes and lay each one over top of each of the 12 squares so the mango hangs down over the sides. Using a toothpick, poke through the mango into the opposite side. Now add two goji berries to each side of the toothpick and top each piece with a mint leaf. This is a fantastic treat for the little ones and a lot of fun for the entire family to prepare. Store any leftovers in an airtight glass container in the refrigerator and consume within 4 days.
